I tried this when I needed more protein and wanted something quick and tasty. I found it very good once I topped it with almond butter, strawberries, and chopped nuts, and I truly think it would work well with cream and jam if you're in that mood. At least it's good to grab and I plan to try all sorts of variations. I listed macros both with and without toppings, but of course, you can vary this in many ways.
Put cauliflower and eggs in the blender and blend until it turns into a pancake batter. You can season it as you like. I added salt, pepper, and dill just because I put that on my omelets. I suggest experimenting with this. Makes 3 patties and fry on a pan. Place on a plate and top with almond butter, strawberries, and chopped nuts (I needed fat, so I chose this topping).
